After making our Egg Drop sandwiches, we had a lot of leftover bread. To use that up, I decided to throw together these cute little shrimp toasts.
This dish is actually quite simple. You just combine all topping ingredients in a bowl, spread on toast, and air fry. All done!
Shrimp toast is usually fried in oil, which is delicious, but uses so much oil! The bread also absorbs all the oil, which is not great for your health. So we opted to air fry our healthier version instead. Using the gluten free bread actually helps because it gets crispier in the air fryer than regular white bread would.

Shrimp Toast
Ingredients
- ½ lb shrimp
- ¼ tsp salt
- ¼ tsp monkfruit sugar
- ¼ tsp white pepper
- 1 tsp sesame oil
- ½ tsp ginger grated
- 1 tsp tamari
- 1 tsp cornstarch
- 2 slices gluten free bread crust removed and quartered into triangles
- Sesame seeds
- Cooking spray
Instructions

Rough chop half the shrimp and chop the other half into a paste. Combine the shrimp together with salt, sugar, white pepper, sesame oil, ginger, tamari, and cornstarch. Set aside in the refrigerator for 20 minutes.

Remove shrimp mixture from the refrigerator and spread shrimp on top of each piece of toast.

Sprinkle sesame seeds on top of the shrimp.

Spray the inside of the air fryer with cooking spray. Place toast in batches in the air fryer and fry for 8 minutes at 320 degrees F.
