Chef K and I are still in the Valentine’s Day spirit with this Pear and Pomegranate Mocktail.
A little background on Chef K and I, we both don’t drink alcohol. However, we wanted to make a mixed drink that has all the flair and flavors of a fancy cocktail. Mixing different fruit flavors with a hint of citrus and fresh herbs.
We wanted to do more than just dropping a sprig of rosemary into the drink. Then it is more of a garnish rather than really giving the drink much flavor.
That is why we chose to simmer the rosemary in the honey, so that we could really infuse the honey with the rosemary flavor.

Pear and Pomegranate Mocktail
Ingredients
- 1 bottle pear cider
- 4 oz pomegranate juice
- 1 lemon juice
- 4 sprigs rosemary plus more for garnish
- 8 oz raspberries
- 1 cup water
- ½ cup honey
Instructions

Bring small pot of your cup of water to a boil and add honey. Let honey boil until dissolved, then add rosemary sprigs for 2 minutes. Remove from heat and let cool, then remove rosemary sprigs.

Pour cider, pomegranate juice, lemon juice, and your honey mixture to a large pitcher. Stir well.

Add your raspberries to pitcher, then it is ready to serve. Feel free to add a sprig of fresh rosemary in each cup when serving.
