Tacos are great because they can be topped with just about anything. The toppings we used were pineapple guacamole, pickled red onion, and simple home-made “refried” beans.
You don’t have to use the same toppings as us, but adding toppings is essential for the full taco experience. Add whatever your favorites are!
That being said, we highly recommend a layer of refried beans on the bottom (either home-made OR store-bought). Refried beans act as glue to hold down the rest of the filling. Be sure to include some so you don’t end up with taco filling on the floor!
For the actual filling, we went with a combo of mushrooms and bell peppers to give the tacos a “meaty” bite. This way it stays true to the classic texture and pairs as expected with those toppings we know and love.

Mushroom and Bell Pepper Tacos
Ingredients
- 1 tbsp olive oil
- 4 cloves garlic crushed and minced
- 2 cups cremini mushrooms sliced
- 1 green bell pepper sliced
- 1 tsp ground chili powder
- 1/2 tsp ground cumin
- 1/2 tsp kosher salt
- 1/4 cup cilantro minced
- 8 mini corn tortillas

Instructions

Place a large skillet over medium-high heat. Add the oil to coat the pan. Add the garlic and saute until fragrant (1-2 minutes). Add the mushrooms, bell pepper, chili powder, cumin, and salt.

Saute for 10 minutes, stirring occasionally. Add the cilantro, stir to combine. Remove from heat.

While waiting for the filling, heat tortillas as desired (we heat ours up in a pan).

Place down a warm tortilla, add some filling, top with your favorite taco toppings, and enjoy!
