Mushroom and Bell Pepper Tacos

Servings 8 tacos

Ingredients

  • 1 tbsp olive oil
  • 4 cloves garlic crushed and minced
  • 2 cups cremini mushrooms sliced
  • 1 green bell pepper sliced
  • 1 tsp ground chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp kosher salt
  • 1/4 cup cilantro minced
  • 8 mini corn tortillas

Instructions

  1. Place a large skillet over medium-high heat. Add the oil to coat the pan. Add the garlic and saute until fragrant (1-2 minutes). Add the mushrooms, bell pepper, chili powder, cumin, and salt.
  2. Saute for 10 minutes, stirring occasionally. Add the cilantro, stir to combine. Remove from heat.
  3. While waiting for the filling, heat tortillas as desired (we heat ours up in a pan).
  4. Place down a warm tortilla, add some filling, top with your favorite taco toppings, and enjoy!
