Red onions are one of the sweetest onion types, which makes it a perfect candidate for pickling. There are lots of recipes out there that add sugar or other sweeteners, but this recipe is different. It’s designed for those who appreciate the natural sweetness of an onion.
That being said, the addition of lime does boost the sweetness. It makes the flavor more mild without losing the satisfying bite of onion. It maintains that classic onion crunch.
These are designed to be a versatile topping. They can go on top of a buddha bowl, over a salad, in a taco, or on a pizza. Keep a jar of these in the fridge, they are ready to be added to anything you cook up throughout the week!

Lime Pickled Red Onion
Ingredients
- 1 large red onion halved and thinly sliced
- 1/2 cup lime juice approx. 6 limes or use pre-squeezed juice!
- 1 tsp kosher salt
- 1/2 tsp dried oregano
- Pinch crushed red pepper flakes
Instructions

Boil some water on the stove top (only ~2 cups needed).

Place the red onion slices in a medium-sized, glass or ceramic bowl. Pour the boiling water over the onions, stir, and let sit for 10 seconds. Drain the water from the onions.

Add the lime juice, salt, oregano, and red pepper flakes into the onion bowl. Stir to combine.

Transfer to an airtight container and store in the fridge. Let sit for at least 15 minutes before using. Enjoy!
