Lime Pickled Red Onion

Ingredients

  • 1 large red onion halved and thinly sliced
  • 1/2 cup lime juice approx. 6 limes or use pre-squeezed juice!
  • 1 tsp kosher salt
  • 1/2 tsp dried oregano
  • Pinch crushed red pepper flakes

Instructions

  1. Boil some water on the stove top (only ~2 cups needed).
  2. Place the red onion slices in a medium-sized, glass or ceramic bowl. Pour the boiling water over the onions, stir, and let sit for 10 seconds. Drain the water from the onions.
  3. Add the lime juice, salt, oregano, and red pepper flakes into the onion bowl. Stir to combine.
  4. Transfer to an airtight container and store in the fridge. Let sit for at least 15 minutes before using. Enjoy!
