When I’m busy at work, I tend to forget to eat breakfast in the morning. It’s difficult to make time for myself although I know I should! These one-bite muffins are perfect for me to pop in my mouth between morning meetings.
This recipe is like a bowl of apple cinnamon oatmeal in a muffin form. I added a little ginger to give a tiny kick. Maybe it will help wake you up in the morning!
Don’t get me wrong though, I don’t just eat these for breakfast. I end up snacking on these throughout the day too. Sometimes, I snack on one right after work for a boost of energy before my afternoon workouts. They are the perfect size to hold me over through my workout before dinner.
If you don’t have oat flour, you can make your own with regular oats. Blending oats in the blender makes oat flour in a matter of seconds.
Chef K and I almost always have oats in our pantry for overnight oats and protein balls. We actually don’t buy oat flour too often because it’s easier (and usually cheaper) to just make our own. If you have oats laying around, you’re just 1 step away from having oat flour!

Ginger Apple Mini Muffins
Ingredients
- ¾ cup oat flour
- 1 tsp cinnamon
- 1 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- ¼ cup coconut oil melted
- ¼ cup monkfruit sugar
- ¼ cup applesauce
- ½ tsp vanilla
- 1 egg
- ½ tsp grated ginger
- ¾ cup apples diced small
- Rolled oats optional
Instructions

Preheat the oven to 350 degrees F.

Combine oat flour, cinnamon, baking powder, baking soda, and salt in a bowl and set aside.

In a separate bowl, whisk together coconut oil, monkfruit sugar, apple sauce, vanilla, egg, and grated ginger.

While whisking, slowly add dry mix to the wet mixture. Continue mixing until well combined.

Fold apples into the batter.

Line a mini muffin tin with 15 mini muffin liners. Spoon about a tablespoon of batter into each muffin liner.

Sprinkle a few oats on top of the batter before baking.

Bake at 350 degrees F for 12 minutes.
