Ginger Apple Mini Muffins

Ingredients

  • ¾ cup oat flour
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ¼ cup coconut oil melted
  • ¼ cup monkfruit sugar
  • ¼ cup applesauce
  • ½ tsp vanilla
  • 1 egg
  • ½ tsp grated ginger
  • ¾ cup apples diced small
  • Rolled oats optional

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Combine oat flour, cinnamon, baking powder, baking soda, and salt in a bowl and set aside.
  3. In a separate bowl, whisk together coconut oil, monkfruit sugar, apple sauce, vanilla, egg, and grated ginger.
  4. While whisking, slowly add dry mix to the wet mixture. Continue mixing until well combined.
  5. Fold apples into the batter.
  6. Line a mini muffin tin with 15 mini muffin liners. Spoon about a tablespoon of batter into each muffin liner.
  7. Sprinkle a few oats on top of the batter before baking.
  8. Bake at 350 degrees F for 12 minutes.
