I made too much of our Miso Karaage recipe for dinner one night, so I decided to turn the leftovers into this chicken and waffles recipe for breakfast the next day. You don’t have to use the miso karaage recipe though!
You can use any fried chicken recipe with these mini waffles. Possibly try our Popcorn Chicken recipe or do your own simple air fryer fried chicken instead.
These blender waffles could not be any easier. You just add all the ingredients together and blend until smooth. In the waffle maker, you want the batter of each waffle to cover about 4 squares. Your waffle does not need to be a perfect square, I think it looks better when all the waffles are different shapes!
Originally, I was going to drizzle maple syrup over the waffle, but somehow Chef K and I both ran out of maple syrup at the same time! The chicken needed some sort of sauce though.
Chef K came up with the idea of making a simple honey mustard. I thought that it was going to be a weird combination. I should never doubt Chef K though because it turned out to be delicious!

Chicken and Waffles
Ingredients
Waffles
- 1 ½ cup oats
- 1 ½ tsp baking powder
- pinch of salt
- 2 eggs
- ¾ cup plant based milk
- ¼ cup coconut oil melted but not too warm
- 1 tbsp honey
- 1 tsp vanilla
- cooking spray
Simple Honey Mustard Sauce (optional)
- 1 tbsp brown mustard
- 1 tbsp mayonnaise
- 1 tbsp honey
- 1 tsp white vinegar
Instructions

Preheat waffle iron and lightly spray with cooking spray.

Blend all waffle ingredients except the cooking spray together in a blender until batter becomes smooth.

In the waffle iron, spoon about 2 tablespoons of batter for each mini waffle. Cook per waffle iron settings.

Whisk together honey mustard ingredients in a small bowl.

Top each mini waffle with a piece of chicken. Sprinkle furikake on top and drizzle with honey mustard sauce.
