Preheat waffle iron and lightly spray with cooking spray.

Blend all waffle ingredients except the cooking spray together in a blender until batter becomes smooth.

In the waffle iron, spoon about 2 tablespoons of batter for each mini waffle. Cook per waffle iron settings.

Whisk together honey mustard ingredients in a small bowl.

Top each mini waffle with a piece of chicken. Sprinkle furikake on top and drizzle with honey mustard sauce.
