Chicken and Waffles

Ingredients

Waffles

  • 1 ½ cup oats
  • 1 ½ tsp baking powder
  • pinch of salt
  • 2 eggs
  • ¾ cup plant based milk
  • ¼ cup coconut oil melted but not too warm
  • 1 tbsp honey
  • 1 tsp vanilla
  • cooking spray

Simple Honey Mustard Sauce (optional)

  • 1 tbsp brown mustard
  • 1 tbsp mayonnaise
  • 1 tbsp honey
  • 1 tsp white vinegar

Instructions

  1. Preheat waffle iron and lightly spray with cooking spray.
  2. Blend all waffle ingredients except the cooking spray together in a blender until batter becomes smooth.
  3. In the waffle iron, spoon about 2 tablespoons of batter for each mini waffle. Cook per waffle iron settings.
  4. Whisk together honey mustard ingredients in a small bowl.
  5. Top each mini waffle with a piece of chicken. Sprinkle furikake on top and drizzle with honey mustard sauce.
