I’m a big fan of smoothies. They’re refreshing and full of so many vitamins and nutrients. After enjoying a smoothie I feel energized, unlike some other snack foods that can make you feel weighed down.
The idea with this nicecream is for it to be a frozen version of a banana berry smoothie.
If you’re expecting this to taste exactly like regular ice cream, you’ll be disappointed. Don’t go into this recipe with that mindset. I won’t pretend this is some magic dessert, this just tastes like bananas and berries, but the charm with nicecream is the texture.
It manages to avoid being too icy, so the texture is smooth and creamy. Perfectly refreshing as a healthy snack or a dessert on a hot day!

Berry Swirl Banana Nicecream
Ingredients
- 2-3 bananas sliced into 1/2-inch pieces and frozen
- 2-4 tbsp non-dairy milk as needed
- pinch of salt
- 1/2 lb frozen mixed berries about 3/4 cups of raspberry, blackberry, blueberry
Instructions

Place a pot over medium-low heat.

Add the berries and stir frequently until they become thawed and mushy.

Remove from heat and use a potato masher to break down the berries.

Place a sieve over a bowl and pour the berries through, press down to push out the juices and pulp, separating them from the seeds.

Place the bowl in the refrigerator for 1 hour, or until the berry mixture cools fully.
Nicecream

In a high-speed blender, add the frozen bananas, 2 tbsp of non-dairy milk, and a pinch of salt.

Blend on the lowest setting until the nicecream begins to churn. Then, pulse between high and low speeds until smooth. Add more non-dairy milk if needed.

Transfer into a freezer-proof container.

Drizzle over as much of the berry mixture as desired and use a butter knife to swirl in the berries.

Either serve immediately, or freeze it 15-30 minutes until the desired consistency is reached.
