Berry Swirl Banana Nicecream

Ingredients

  • 2-3 bananas sliced into 1/2-inch pieces and frozen
  • 2-4 tbsp non-dairy milk as needed
  • pinch of salt
  • 1/2 lb frozen mixed berries about 3/4 cups of raspberry, blackberry, blueberry

Instructions

Berries

  1. Place a pot over medium-low heat.
  2. Add the berries and stir frequently until they become thawed and mushy.
  3. Remove from heat and use a potato masher to break down the berries.
  4. Place a sieve over a bowl and pour the berries through, press down to push out the juices and pulp, separating them from the seeds.
  5. Place the bowl in the refrigerator for 1 hour, or until the berry mixture cools fully.

Nicecream

  1. In a high-speed blender, add the frozen bananas, 2 tbsp of non-dairy milk, and a pinch of salt.
  2. Blend on the lowest setting until the nicecream begins to churn. Then, pulse between high and low speeds until smooth. Add more non-dairy milk if needed.
  3. Transfer into a freezer-proof container.
  4. Drizzle over as much of the berry mixture as desired and use a butter knife to swirl in the berries.
  5. Either serve immediately, or freeze it 15-30 minutes until the desired consistency is reached.
