BBQ Pulled Pork Tacos

Ingredients

Pulled Pork

  • 3 lbs Pork Shoulder cubed
  • 1 tsp Paprika
  • 1 tsp Cumin
  • tsp Cayenne
  • ½ tsp Coconut Sugar
  • ½ tsp Ground Mustard
  • ½ tsp Garlic Powder
  • ½ tsp Onion Powder
  • ½ tsp Salt
  • ½ tsp pepper
  • 2 cloves Garlic
  • 1 cup Chicken Stock

BBQ Sauce

  • 1 Shallot
  • 3 cloves Garlic
  • 6 oz Tomato Paste
  • 3.5 oz Chipotles in Adobo Sauce
  • ½ cup ketchup
  • ¾ cup apple cider vinegar
  • 3 tbsp honey

Coleslaw

  • 1 half head small cabbage sliced
  • Salt to taste
  • Pepper to taste
  • 3 tbsp of mayonnaise
  • ½ cup dill pickles sliced
  • 2 tsp dill pickle juice

15 small tortilla shells

Instructions

  1. Mix all your pulled pork ingredients together in your InstantPot. We recommend rubbing the spices on the pork first. Set the InstantPot on Manual for 30 minutes. Let it naturally release the pressure when it is done.
  2. While your pork is cooking, prep all ingredients for your BBQ sauce in a blender. Blend together until you have a nice smooth sauce. Set a side to use when pork is done.
  3. Coleslaw is just as simple as the pork and BBQ sauce. Toss all coleslaw ingredients together in a bowl. Mix until cabbage is evenly coated.
  4. Once your pork is done, spoon it into a large bowl and pull the meat apart. The meat should be very tender and fall apart easily. Slowly incorporate in the BBQ sauce until you reach your desired level of sauciness. You can use any leftover sauce to drizzle on your taco.
  5. Heat up a small flat pan to medium heat. Cook tortillas one by one for 30 seconds on each side. When you pull the warm tortilla out of the pan, fold it over so it cools into a nice taco shell for you.
  6. Assemble by putting a hearty layer of pulled pork in your taco and then a spoonful of coleslaw on top.
