Maple Walnut Oatmeal Muffins

Ingredients

Dry Ingredients

  • 2 cups of Oats
  • 1 cup of Almond Flour
  • 3 tbsp Arrowroot Starch
  • 1 tsp Cinnamon
  • ½ tsp Baking soda
  • 1 pinch Sea Salt
  • 1 hefty cup of walnuts blended ¾ cup walnut butter

Wet Ones

  • ½ cup Unsweetened Hemp Milk
  • cup Maple Syrup
  • ¼ cup coconut Oil
  • 1 tsp Vanilla Extract
  • 3 or maybe 4 Eggs I can’t make up my mind

12 Strawberries (optional garnish)

Instructions

  1. Preheat oven to 375° F.
  2. Combine all the dry ingredients in a medium sized bowl.
  3. Mix all the wet ingredients in another bowl, once well mixed, slowly add your dry ingredients until all well combined. Blend with a mixer or mix by hand.
  4. Line a muffin pan with 12 muffin liners (preferably parchment).
  5. Fill all muffin liners evenly until batter is used up.
  6. Optional: Lightly press sliced strawberries on top of each muffin in whatever pattern you like. Be creative, explore your inner strawberry design skills.
  7. Bake for 30 minutes.
