In a small bowl or in a liquid measuring cup, heat up dairy free milk to 109 degrees F. Add sugar and yeast to the milk, stir and set aside for 10 minutes.

In a mixing bowl, combine the salt, gluten free flour, baking powder and baking soda. Pour milk mixture into the flour mixture. Stir together until smooth.

Cover bowl and set aside in a warm place to proof for 90 minutes.

Heat up a frying pan or cast iron over medium heat. Add oil and place biscuit cutters or any sort of ring in the pan.

Add batter to each ring and cook for 3 - 4 minutes until golden. Remove the ring and flip the crumpet over to cook for another 2 minutes on the second side.
