Sweet Crumpets

Ingredients

Crumpet

  • 200 ml dairy free milk
  • ¾ tsp sugar
  • tsp active dry yeast
  • ¼ tsp salt
  • 1 cup gluten free flour Bob’s 1:1
  • tsp baking powder
  • ¼ tsp baking soda
  • 1 tbsp vegetable/canola oil

Recommended Sweet Toppings

  • Maple almond butter banana, hemp seeds, pecan
  • Chocolate spread strawberries, cocoa nibs
  • Apple butter peach, shredded coconut

Instructions

  1. In a small bowl or in a liquid measuring cup, heat up dairy free milk to 109 degrees F. Add sugar and yeast to the milk, stir and set aside for 10 minutes.
  2. In a mixing bowl, combine the salt, gluten free flour, baking powder and baking soda. Pour milk mixture into the flour mixture. Stir together until smooth.
  3. Cover bowl and set aside in a warm place to proof for 90 minutes.
  4. Heat up a frying pan or cast iron over medium heat. Add oil and place biscuit cutters or any sort of ring in the pan.
  5. Add batter to each ring and cook for 3 - 4 minutes until golden. Remove the ring and flip the crumpet over to cook for another 2 minutes on the second side.
  6. Top crumpet with our suggested toppings!
