Ingredients

Meatball

  • 1 pound ground beef
  • ½ onion finely chopped
  • 1 clove garlic minced
  • ½ cup gluten free breadcrumbs
  • 1 tbsp parsley chopped
  • 1 egg
  • ¼ tsp nutmeg
  • 1 tsp paprika
  • Salt and pepper

Tomato Sauce

  • 1 tbsp olive oil
  • ½ onion finely chopped
  • 2 cloves garlic minced
  • 14.5 oz canned diced tomatoes
  • ½ tsp dried oregano
  • 1 bay leaf
  • Dash of cayenne
  • Salt and pepper
  • 1 tbsp parsley chop

Instructions

Meatball

  1. Preheat air fryer to 400 degrees F.
  2. In a medium sized bowl, mix together all meatball ingredients until well combined. Use your hands to combine the ingredients.
  3. Shape meatballs in 1½ inch diameter meatballs.
  4. Place meatballs in the air fryer and cook for 6-8 minutes.

Sauce

  1. Heat olive oil in a small saucepan over medium heat.
  2. Add onions and garlic to the saucepan. Saute for 1-2 minutes until onions start to become translucent.
  3. Add diced tomatoes, oregano, bay leaf, cayenne, salt, and pepper to the saucepan. Bring to a boil, then lower temp and let simmer for 15 - 20 minutes until your sauce begins to thicken.
  4. Stir parsley into your sauce.

Toss meatballs in the sauce until they are slightly coated in the sauce, then serve!
