Za'atar Chickpea Crackers

Ingredients

Dough

  • 2 cups chickpea flour
  • ½ tsp sea salt
  • 2 tbsp avocado oil
  • cup warm water

Topping

  • 1 tbsp avocado oil
  • 3 tbsp za'atar
  • 1 tbsp sumac
  • Maldon sea salt for topping or kosher salt

Hummus for serving (optional)

Instructions

  1. Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper.
  2. In a large bowl, combine chickpea flour, sea salt, and avocado oil. Slowly add the warm water until a dough forms.
  3. Spread out the dough and roll into a large rectangle, about ⅛ inch or thinner. It will be very sticky, use plastic wrap or dust with more chickpea flour as needed.
  4. Using a pizza cutter or butter knife, segment the large rectangle into small, cracker-sized rectangles
  5. For the topping, lightly brush the top with the dough with the avocado oil. Sprinkle the za'atar, sumac, and maldon sea salt on top. Gently pat the spices down into the dough.
  6. Bake for 30-35 minutes on the bottom rack of the oven. After about 25 minutes, watch carefully, and adjust times as needed. Thinner crackers will bake faster, so remove crackers if they cook too quickly,
  7. Allow crackers to cool completely. Serve with hummus or enjoy them on their own!
