Baked Breaded Artichoke Hearts

Ingredients

  • 16 oz jar of artichoke hearts
  • ½ cup vegan mayo
  • ½ tsp kosher salt
  • ¼ tsp paprika
  • ¼ tsp black pepper
  • ¾ cup Italian gluten free breadcrumbs
  • 1 lemon

Instructions

  1. Preheat oven to 400 degrees F and line a baking tray with parchment paper.
  2. Drain artichoke hearts.
  3. Combine vegan mayonnaise, salt, paprika, and pepper together in a small bowl.
  4. Put breadcrumbs in a separate small bowl.
  5. Dip artichokes in the mayonnaise mixture, then coat with bread crumbs. Place on baking sheet and repeat with remaining artichoke hearts.
  6. Bake for 18 minutes, flipping halfway through.
  7. Serve with a wedge of lemon to squeeze on top before eating.
