Another Food Wars inspired recipe! Soma, the main character, needed to come up with a fried chicken recipe that would bring business back to his neighborhood.

Since this is a cooking show, he can’t just serve any old regular fried chicken. Instead, he came up with this fun wrap you can eat on the go!

This wrap isn’t a standard crepe or pita, it’s made of bahn xeo. Chef K and I have made bahn xeo before. It’s one of my mom’s favorite Vietnamese dishes and it’s surprisingly really easy to make. The rice flour batter gives bahn xeo a nice crisp that is perfect with the fried chicken.

When preparing the chicken, make sure to shake off any extra marinade or starch. I noticed that the excess marinade would gunk up the air fryer tray. This blocked the air from circulating throughout the air fryer and caused uneven cooking.

Without even cooking, the chicken won’t get crispy! Once I was more careful with shaking off the marinade and I washed the tray, the chicken turned out nice and crispy as expected.

For toppings, we chose to use red romaine lettuce, mint, and basil. However, you can use different herbs like perilla leaves, cilantro, or parsley. The herbs and lettuce bring a freshness to the wrap that balances out the fried chicken.

Ingredients

Banh Xeo

  • 1 cup rice flour
  • ⅛ tsp turmeric
  • ¼ tsp salt
  • ¾ cup water
  • ⅓ cup coconut milk

Fried Chicken

  • 1 lb chicken thighs
  • 3 tbsp tamari
  • 1 tbsp mirin
  • 1 clove garlic
  • 1 tbsp ginger
  • ½ sweet apple
  • ¼ yellow onion
  • 1/2 tsp gochugaru
  • 1 cup potato starch
  • Cooking spray

Sauce

  • ¼ cup ketchup
  • 2 tsp gochujang
  • 1 tbsp fish sauce

Toppings

  • Red romaine lettuce
  • Basil
  • Mint

Instructions

  1. Add all marinade ingredients except for the chicken, starch, and cooking spray into a food processor. Pulse a few times until the apple and onions are broken down. It does not have to be a smooth paste, since it’s just a marinade.
  2. Place chicken in a ziploc bag with the marinade and set in the refrigerator for 2 hours or overnight.
  3. Whisk together rice flour, turmeric, and salt, then add in remaining batter ingredients. Whisk until it creates a nice smooth batter. Set aside for 30 minutes.
  4. Heat up the air fryer to 360 degrees F. Remove chicken from the marinade and coat in starch. Spray the insert with oil, add the chicken in batches (do not overfill), and air fry for 10 minutes.
  5. Heat up a medium pan with a little bit of oil over medium high heat. Pour in batter, rotate pan to spread batter evenly.
  6. Whisk together all sauce ingredients.
  7. Assemble by placing the lettuce, in the center of the banh xeo with a few leaves of basil and mint, then add chicken on top with a drizzle of the sauce. Fold up the sides to complete the wrap.
