Strawberry Fortune Cookies

Fortune cookies are such a fun novelty idea. Instead of putting your typical fortunes in the center with phrases like “Believe it can be done.”, we decided to turn them into a treat for Valentine’s Day! We filled these cookies with sayings usually found on Sweethearts candies.

When the cookies come out of the oven, you have to start folding them into the fortune cookie shape immediately. Of course, the cookie will be super hot still, so if you don’t have a high heat tolerance like I do, I recommend putting on some rubber gloves for extra protection. You can also enlist extra hands to help with the folding process.

If you are using white chocolate, be careful not to get too much of the chocolate into the center of the cookie. We realized that we over dipped some of the cookies and white chocolate had seeped into the center.

This made it impossible for us to get the fortune out and we ended up tearing a couple fortunes in the process. Hopefully those fortunes still come true!

Strawberry Fortune Cookies

Prep Time 20 minutes
Cook Time 10 minutes
Servings 18 cookies

Ingredients

  • 1 egg white
  • ¼ cup monkfruit sugar
  • 2 tbsp vegan butter melted and cooled
  • ⅛ tsp vanilla extract
  • ⅓ cup gluten free flour
  • 2 tbsp strawberry juice
  • Red food coloring optional
  • 2.8 oz of vegan white chocolate optional
  • Sprinkles optional
  • 18 fortunes

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a stand mixer, whip egg white and sugar until frothy. Mix in melted butter and vanilla until well combined. Add in flour and mix well. Lastly, add in your strawberry juice 1 tbsp at a time. If using food coloring, mix in now.
  3. Spoon ½ tbsp into a circle on a silicon mat or parchment paper. Using the back of the spoon, spread the batter as thin as you can.
  4. Bake for 7-10 minutes until edges begin to brown.
  5. When you remove the cookie from the oven, place a fortune in the center then quickly fold it in half and then fold the ends together.
  6. Allow the cookie to cool in a mini muffin tin to keep its shape.
  7. Melt white chocolate in a microwave safe bowl for 30 seconds at a time until completely melted. Dip fortune cookie in white chocolate and decorate with sprinkles.
