Smashed Potatoes

Who doesn’t love to Hulk smash things? These potatoes are a great simple side dish and a nice way to get out any stress in your life.

Chef K used our ricer to smash, but you can use a fork or a wooden mallet if you have one. I recommend something that is flat, so you get an even smash.

We put a piece of foil over the potato when we smashed it because you don’t want to smash any fingers on accident, but be careful that the buttery potato does not slip out. We found this out the hard way as we played hot potato in my kitchen.

Smashed Potatoes

Prep Time 10 minutes
Cook Time 1 hour 20 minutes
Total Time 1 hour 30 minutes
Servings 4

Ingredients

  • 2 lbs yukon gold potatoes
  • 4 cloves garlic crushed
  • 2 tbsp. butter
  • 2 sprigs thyme
  • ½ tsp paprika
  • Salt and pepper
  • Stone ground mustard or your favorite condiment

Instructions

  1. Preheat your sous vide to 90 degrees.
  2. Pierce potatoes with a fork. Add potatoes to gallon sized ziploc bag with butter, thyme and garlic. Sous vide potatoes for one hour.
  3. Preheat oven 450 degrees.
  4. Remove potatoes from bag and place them on a lined baking sheet. Gently smash potatoes with a potato masher or fork.
  5. Season potatoes with salt, pepper, and paprika.
  6. Roast in oven for 15 minutes, then broil on high for 5 more minutes.
  7. Serve with some stone ground mustard or whatever condiments you like best.
