Savory Miso Oatmeal

Yes, everyone talks about overnight oats, they’re quite trendy. I don’t love being a trend follower, but I make overnight oats nearly every week. So here we are, going to force some more overnight oats down your throats…

They’re pretty good!

Unlike most popular overnight oat recipes floating around out there, this version is savory. It’s great for adding an umami variation to a normally sweet dish. The fusion of miso and oats really leverages miso’s salty depth of flavor.

It can be paired with all kinds of savory toppings. A few we recommend are chili oil, sesame seeds, seaweed flakes, and bacon. Feel free to mix it up.

Savory Miso Oatmeal

Prep Time 10 minutes
Cook Time 20 minutes
Servings 2 people

Ingredients

Overnight Oats:

  • 1 cup old-fashioned oats
  • 2 tbsp ground flax seed
  • 1 cup hazelnut milk or other milk
  • 1 cup water
  • 2 tsp apple cider vinegar

Miso Mix:

  • 1 tbsp olive oil
  • Lacinato kale
  • 1/2 cup water
  • 1 tbsp white miso paste
  • 2 large eggs
  • 2 green onions thinly sliced

Topping Ideas (Optional, for serving)

  • Chili oil
  • Sesame seeds
  • Seaweed flakes
  • Bacon
  • Freshly cracked salt

Instructions

Prep:

  1. In a medium bowl or sealable container, combine all Overnight Oats ingredients together.
  2. Cover and place in the refrigerator for at least 8 hours or overnight.

Cook:

  1. In a medium saucepan, heat the olive oil over medium heat. Add kale and toast until it begins to wilt, 2-3 minutes.
  2. Add the water and white miso paste. Bring saucepan to a simmer and stir to coat kale and completely dissolve miso.
  3. Partially cover and cook for 4-6 more minutes until kale is tender.
  4. Remove the kale, roughly chop, and set aside. Be sure to leave remaining sauce in the pan.
  5. Add overnight oats to the saucepan with the remaining miso mixture, then bring to a bubbling boil over high heat.
  6. Once bubbling, lower temperature to a simmer and cover for 10-12 minutes until the liquid is mostly absorbed. Remove from heat.
  7. Prepare 2 eggs as desired (poached, fried, etc).
  8. To serve, divide oats between bowls, add chopped kale, egg, green onion, and any additional toppings. Be sure to sprinkle on some extra cracked salt!
