When visiting Seattle’s iconic Pike Place Market, you have to stop at “The Crumpet Shop”. My brother introduced me to them a few years ago and I was so impressed with their simple, yet tasty crumpets. The shop is a tiny place with just a counter and a small open kitchen, so you can watch them assemble your crumpet right before your eyes. Go early because there is always a line out the door!
I always thought crumpets were just something you had with butter or jam, but “The Crumpet Shop” takes them to another level with toppings like smoked salmon and cream cheese or green eggs and ham.
We did 2 versions of our crumpets because we wanted to have one to pair with savory toppings and one for sweet toppings. The only difference between the two is the amount of salt we added. The slightly saltier crumpet paired better with our savory toppings.
Crumpets are great as breakfast items, which is why we recommended 2 different combinations with eggs. However, our toppings are just recommendations, so feel free to mix and match or add your favorite ingredients. We encourage creativity and improvisation when it comes to cooking!

Savory Crumpets
Ingredients
Crumpet
- 200 ml dairy free milk
- ¾ tsp sugar
- 1½ tsp active dry yeast
- ½ tsp salt
- 1 cup gluten free flour Bob’s 1:1
- 1½ tsp baking powder
- ¼ tsp baking soda
- 1 tbsp vegetable/canola oil
Recommended Savory Toppings
- Smoked salmon, avocado, egg, chives
- Pesto egg, tomato, bacon
- Prosciutto, pear, arugula, balsamic vinegar
Instructions

In a small bowl or in a liquid measuring cup, heat up dairy free milk to 109 degrees F. Add sugar and yeast to the milk, stir and set aside for 10 minutes.

In a mixing bowl, combine the salt, gluten free flour, baking powder and baking soda. Pour milk mixture into the flour mixture. Stir together until smooth.

Cover bowl and set aside in a warm place to proof for 90 minutes.

Heat up a frying pan or cast iron over medium heat. Add oil and place biscuit cutters or any sort of ring in the pan.

Add batter to each ring and cook for 3 – 4 minutes until golden. Remove the ring and flip the crumpet over to cook for another 2 minutes on the second side.
