Guacamole already tastes super refreshing on its own and it’s perfect for the summer heat. We wanted to boost that sensation by adding a little bit of fruit. Needless to say, we chose pineapple, one of our favorite refreshing summer fruits!
Don’t feel bad if you need to use canned pineapple for this recipe! There’s no shame in that, it’ll taste equally as refreshing with half the hassle.
This side is all about pairing flavor complements. The sweetness of the pineapple complements the spice of the peppers perfectly. The sweetness also balances out the saltiness of the guac for that delicious salty sweet combo.
We really like the additional color that pimentos bring to this recipe, but if you can’t find pimentos, using a classic jalapeno is totally ok. It’ll just be missing those nice sparks of red.

Pineapple Guacamole
Ingredients
- 2 avocados
- 2 cloves garlic crushed and minced
- 2 pimentos seeds removed and diced
- 1/4 cup cilantro minced
- 1/4 tsp sea salt plus more to taste
- 2 tbsp lime juice approx. 1 lime
- 2 tbsp pineapple juice
- 1/2 cup pineapple diced small

In a large bowl, mash avocado.

Add garlic, peppers, cilantro, salt, lime juice, pineapple juice, and diced pineapple. Mix until well combined.
